Weekly Meal Plan 3/4/22 to 3/10/22: Feeding the Family

 


Happy first week of Lent!  I hope your Lent is off to a great start.  I got my Lenten free up over this weekend.  I wanted to do on Wednesday, but this week was busier than normal, so it had to wait.




Weekly Meal Plan (including meatless Mondays and Fridays for Lent)

Friday:  Mediterranean Tuna Salad, rolls


Saturday:  Garlic Butter Chicken Bites and Asparagus  I did not plan on making this.  I planned on making sweet and sour chicken but by dinner time, I just didn't feel like frying chicken.  I just wanted something I could throw in the oven.  The family loved this.  It probably went over better, than the original recipe I was going to use.



Sunday:  Creamy Tomato Gnocchi Oh my was this good!  I used gluten free gnocchi to keep it was for allergies.  This was a belly bomber of a dinner and perfect for Sunday family dinners.  I served it was a salad and rolls.


Monday:  Baked fish with greek salad, rolls

Tuesday:  Turkey Tacos







Thursday:  Clean-up Day. 

 There was nothing to clean up, so I made Jose Guevara's Gallo Pinto from The Blue Zones Kitchen cookbook by Dan Buettner and I added in a pound of mild Italian sausage to give it some "oomph" for my guys.

Weekly Meal Plan 2/25/22 to 3/3/22: Feeding the Family

 



Lent starts this week!  I'm actually very excited to start Lent.  I'll do a whole other post on what I'm doing this year.  It's actually quite scaled down.  I usually try to do too much, and I end up failing at most of it.  I'm getting wiser in my old age (lol).  This week is going to be incredibly busy too so the meal plan is a must for these people to eat.  One thing we all decided on, as a family, is that we will have two meatless days (and the Middle Son wants to do to one or both of those dairy free also.  We'll see...).

Friday:  Slow Cooker Baked Potato Soup  This is the same one I make all the time.  It's a family favorite.  Because it was Friday, I did not include the bacon; rolls

Saturday:  Naan Bread Pizzas:  These are so easy, and everyone loves them.  I just purchase the naan bread and top it like I would a regular pizza crust.  This week we had red sauce with mozzarella cheese, and pepperoni, and a white pizza with olive oil, garlic, green pepper, onion, mushroom, and topped with mozzarella cheese.  I made a gluten free Dr. Schar pizza shell topped with pizza sauce, mozzarella cheese, and pepperoni for the Middle Son.




Sunday:  Oven Roasted Turkey Breast, Mashed Potatoes, and oven Roasted Asparagus:  I rubbed the turkey breast down with olive oil and sprinkled it with salt, pepper, garlic powder, and poultry seasoning.  Then I baked it in the oven at 400 until the internal temperature was 180 degrees F (about an hour and half).  It was like a mini Thanksgiving dinner.


I'm not a big turkey eater, so I added a salad to my plate.



Monday:  Lasagna (using GF lasagna noodles), salad, rolls

Tuesday:  Shrove Tuesday:  Pancakes, sausage, and hash browns.

Wednesday:  Ash Wednesday:  Spanakorizo and baked cod for the guys, rolls

Thursday:   Clean up or Poor Man's Meal


I didn't make anything extra this week for lunch or breakfast.  We still have quite a few egg sandwiches in the freezer, and we have a lot of leftovers, and we can have those for lunches. 

I did cut up a bunch of fruit to have with breakfast or as a snack.  We have a few containers of honey dew melon and pineapple.

Weekly Meal Plan 1/28/22 to 2/3/22: Feeding the Family




Last week's meal plan got completely blown out of the water.  We have a wrestler in the family, and last week his coach changed his weight class and our wrestler needed to cut 10 pounds.  That made all of my meals with cheese or cream, or beef obsolete.  So, I pivoted.  And that's the beauty of meal planning.  You have food in the house, you may just have to change how you use it depending on changes that occur during the week.  Usually, it's a schedule change that causes me to pivot, but last week was a new one for me.  This child is still cutting weight, so you'll notice that this week's meal plan is heavy on chicken.  They told him to concentrate on eating chicken or eggs, and since he's anaphylactic to eggs, we stuck with chicken.


Friday:  Leftovers for the wrestler, and the rest of us ate out due to a late indoor baseball practice.

Saturday:  Chicken Au Champagne, baked potato, and vegetable





Sunday:  Chicken Italian Sausage and Peppers in Rao's low sugar marinara sauce




Monday:  Teriyaki Chicken and Broccoli Stir Fry with gluten free ramen noodles




Tuesday:  Hot Dogs and Veggies (requested by the wrestler)

Wednesday:  Slow Cooker Chicken Tortilla Soup

Thursday:  Chicken and veggie sheet pan meal


Lunches:  Italian Wedding Soup (meatballs made with no egg, gf breadcrumbs, and ground chicken)



Breakfast:  Cinnamon toast for the 9-year-old and egg and cheese sandwiches (in the freezer) for the hubby.

This is a very chicken heavy meal plan.  I tried to keep it interesting and tasty while keeping it low fat/low carb for the wrestler.  Any meal that included carbs were for the others and the wrestler had the option to eat them or not.

For most of next week, he'll be at an overnight retreat, so our meal plan should look a bit different.

Menu Plan Monday 3/08/2021

 Happy Monday!!  It's sunny here today and we are supposed to get a few days in the 60's.  I'm so ready for Winter to be over.  I know winter isn't gone for good yet, but it's nice to see an end in sight.

I've been shopping at Aldi's the past few weeks trying to save money.  I've also been going to our local butcher for lunch meat and a few extras.  I do see some savings, but I still need to do better.  I'll be working on that over the next few weeks.

Menu for the week of 3/5-3/11:




Friday:  Egg and cheese sandwiches (like an egg McMuffin but homemade), boxed gluten free Mac and Cheese, and fruit. (meatless Friday)

Saturday:  Hamburgers and Hot Dogs on the grill: potato chips as a side dish 

Sunday:  Cowboy Grub This is from the Trim Healthy Mama cook book (pg 59)




Monday:  Gluten Free stuffed shells (I made a double batch for Christmas Eve and these were in the freezer); salad; Italian bread (meatless Monday)

Tuesday:  Chicken Tacos:  I don't really have a recipe for these. I usually make them in the slow cooker, but I'm going to make them in the Instapot tomorrow.  I'm basically going to make shredded chicken in the Instapot and I'll be making enough for Wednesday's dinner too.  I'll separate Tuesday and Wednesday's chicken and add taco sauce to Tuesday portion.  I have corn tortillas that I need to use so I am going to fry those on the stove, add the chicken and all the toppings and serve.

Wednesday:  Chicken Fried Double Rice (brown rice and cauli rice mixed).  Again, this recipe is from the Trim Healthy Mama cook book.

Thursday: Clean up day


I also made a veggie and cheese frittata for breakfast this week



Trim Healthy Mama Trim Train Taco Soup for lunches.  The hubby will add a sandwich to his lunch and I'll have a salad.




And I made all the rice for last nights dinner, to go with Taco Tuesday, and for Wednesdays Chicken Fried Double Rice.

This Weeks Menu and a Missing Family Member

 We are missing someone this week.  Sunday we took the oldest back to college.  We all miss him and it's going to take some time to get used to family life without him.  I feel like we are just not complete.  But I know he's where he needs to be.  

Last weeks menu included all of his favorite meals and some take out that he requested.  It certainly wasn't the healthiest of eating plans.  I feel like I need a detox.  Since we are down a family member, I am truly trying to cut our grocery bill.  It was really getting out of control.  I'm embarrassed to write down what it got up to.  So I am making some changes.  2 in private school and 1 in college means money is very tight.  It's up to me to do a better job being a steward of our finances.  

This weeks menu:

Fri:  Pierogi's (from a Cleveland bakery) and baked cod (sprinkled with lemon juice and fish seasoning. Baked at 400 F until done)






Sat:  Take out Pizza (per son's request)




Sun:  Left overs/sandwiches after our 8 hour trip

Mon:  Dirty Rice (I used venison and used this recipe from Grandbaby Cakes as a guide)

Tues:  Slow Cooker Chicken Tortilla Soup (from Baked By Rachel)

Wed:  Mini venison meat loaves,  mashed potatoes, vegetable (mashed potatoes in the slow cooker from Made It. Ate It. Loved It.)

Thurs:  Honey Sesame Chicken in the slow cooker over rice (from The Gunny Sack)


I spent a lot less at the grocery for this week than I had been.  But we bought the pierogi's, pizza, and lunch on the road Sunday so the savings wasn't as much as I had hoped.  There's no eating out next week so hopefully I can see a bigger savings.  One thing I am going to try to do more is soups.  Soups with rolls can be filling, healthy, and cost effective.
